Gluten Free Sausage and Noodles

Ingredients
  • 4 tblsp. olive oil
  • 1 lb. Premio Italian Sweet sausage
  • 8 oz. mushrooms, cleaned and sliced
  • ¾ tsp. salt
  • ¾ tsp. pepper
  • ½ cup parmesan cheese
  • Reserve ½ cup cooking water from pasta
  • 4 tblsp. olive oil
  • ½ package gluten free pasta, cooked
Instructions
  1. Boil sausage in a large pot for 20 minutes. Then slice the sausages into bite size pieces.
  2. Heat 2 tablespoons of oil in a large pot or wok. Cook sausage until browned. Remove sausage with a slotted spoon and set aside. Add 2 more tablespoons of oil to the pot.
  3. Heat oil and add mushrooms, salt and pepper. Cook, stirring frequently, about 8 minutes. Return the sausage to the pot and heat through about 2 minutes.
  4. Meanwhile cook gluten free pasta according to package directions. Reserve ½ cup of pasta water when you drain it. Combine the pasta water with 4 tablespoons of olive oil. Pour over sausage mixture and cook for another 5 minutes.
  5. Toss with gluten free pasta. Add more salt to taste. Sprinkle with parmesan cheese.
